- 1/2 Onion,
diced
- 2 Eggs
- 1 Potato
- 1 Green
pepper
- 50
g Ham
- to
taste Salt and pepper
- Olive
oil a splash
Method
- Get your ingredients
together. This is going to be fast!
- Peel and quarter and
quickly parboil your potato. Important not to overdo this, so keep an eye
on it
- Dice your onion and rough
cut the green pepper
- whisk up your 2 eggs in a
bowl
- The potato is probably
done now! A good way to check is gently prod with a sharp knife - if it
goes in with just a little resistance, they're done! Let them cool and
rough cut a bit smaller
- Heat up a pan with a
splash of olive oil and fry the potato, onion and green pepper. Chop up
the ham and add to the pan. Add salt and pepper to your taste
- When the vegetables are
starting to brown, pour the egg into one side of the pan as shown...
- then let it firm up a
little
- After a couple of minutes
when the egg is firmed up, toss everything together in the pan. Cook for
another minute or two and serve.
