Ingredients
1 lb. rice noodles
1/2 c. low-sodium soy sauce
2 cloves garlic, minced
1 tsp. fresh ground ginger
1 tbsp. extra-virgin olive oil
1 large onion, diced
2 celery stalks, thinly sliced
1/2 head cabbage
Directions
- In a large pot of boiling water, cook noodles according to package directions until al dente. Drain and return to pot.
- In a small bowl, combine soy sauce, garlic, and ginger.
- In a large skillet over medium-high heat, heat oil. Add onion, celery, and cabbage and cook until tender, stirring occasionally, 6 to 8 minutes.
- Add noodles and soy sauce to skillet and stir until fully coated.
