Margarita Cupcakes Recipe
INGREDIENTS
FOR THE CUPCAKES
1 box vanilla cake mix, plus ingredients called for on
box
Juice and zest of 1 lime
FOR THE FROSTING
1 c. butter, softened
5 c. powdered sugar
1/4 c. lime juice
1/4 c. tequila
Coarse salt, for garnish
Lime zest, for garnish
Lime wedges, for garnish
DIRECTIONS
- Preheat oven to 350° and line a cupcake pan with cupcake liners.
- Prepare cake batter according to package instructions. Stir in lime zest and juice, then pour batter into prepared cupcake pan. Bake according to package instructions. Let cool completely before frosting.
- Make tequila frosting: In a large bowl, combine butter, half of the powdered sugar, lime juice and tequila. Using a hand mixer, beat until smooth. Add the rest of the powdered sugar and beat until fluffy.
- Pipe cooled cupcakes with tequila frosting. Garnish with salt, lime zest, lime wedges and a decorative straw.
