INGREDIENTS
2 large zucchini, sliced 1/2" thick
1 lb. ground beef
3 slices cheddar, quartered
Kosher salt
Freshly ground black pepper
Sliced tomato, for serving
Pickles, for serving
Mustard, for serving
Ketchup, for serving
DIRECTIONS
- Shape beef into 12 equally sized patties, about 2” wide. Using your finger, press a shallow indent into the center of each burger. Season both sides of each patty liberally with salt and pepper.
- Heat grill or grill pan to medium high. Grill zucchini and burgers until crust develops and browned, about 2 to 3 minutes per side. Top burgers with cheese.
- Arrange burger patties in between grilled zucchini with tomato, pickles, ketchup, and mustard. Secure with toothpick.
