Oven Fried Chicken Recipe
INGREDIENTS
FOR THE CHICKEN
2 c. panko bread crumbs
1/2 tsp. garlic powder
kosher salt
Freshly ground black pepper
3 large eggs
1/4 c. buttermilk
6 bone-in skin-on chicken
thighs
FOR THE DIPPING SAUCE
3 tbsp. mustard
2 tbsp. barbecue sauce
1 tbsp. mayonnaise
2 tsp. honey
DIRECTIONS
1. Preheat
oven to 425°. Line a baking sheet with aluminum foil.
2. In
a medium bowl, mix together bread crumbs and garlic powder. Season generously
with salt and pepper.
3. In
another medium bowl, whisk together eggs and buttermilk.
4. Pat
thighs dry, then dip into egg mixture. Next, dredge in panko, making sure all
sides are coated. Place on baking sheet and bake until golden and crispy, and a
thermometer inserted in the center reads 180°, about 1 hour.
5. Make
dipping sauce: In a large bowl, combine mustard, barbecue sauce, mayo and
honey. Whisk to combine.
6. Serve
chicken with dipping sauce.
